Due to it's balanced taste and a good flavor called coffee, fine acidity, and good body are always blended for gourmet or specialty coffee.

Sidama, a region in Ethiopia, is famous for its extraordinary coffee. It's one of the three coffee regions with a trademark, along with Harar and Yergachefe. The highlands south of Lake Hawassa produce grade one or two coffee.
The Elevation ranges from 1,500 to 2,250m.a.s.l., meaning that coffees ripen slowly in cool temperatures, developing sweeter and more acidic flavors. The soil is fertile and with 1,200 to 2000mm of annual rainfall, the conditions are ideal for growing coffee. These high elevations also mean the coffee tends to ripen slower, with a later harvest season than the rest of Ethiopia. This allows the cherries to develop those complex flavors and aroma characteristics of Sidama coffee. Sidama has 36 districts.
